We’ve made some updates to our food services for this winter. Check it out:
- Our new coffee and espresso bar in the lodge (“Ka-Wham Coffee”) opened today. See the picture above.
- We have a new BBQ smoker up at the Midway Lodge (think pulled pork sandwiches).
- We have a new chef, and a new “fresh food” philosophy in our kitchen.
This season we’ve completely stripped down our menu and re-designed it with a more authentic multi-cultural feel. (See a pdf of our new menu below.) What does that mean, exactly? Well we’re completely eliminating pre-made products and officially declaring war on processed foods. And who do we owe the credit to? Our new Chef Tommy is the man behind the magic.
A recent transplant from Massachusetts (he moved here from Boston last month to take this job), Tommy is a firm believer in using fresh ingredients, avoiding processed and frozen foods, and making everything from scratch if possible. The result: high quality food.
A culinary school grad, Tommy makes his own pizza dough, bakes the croutons for the salads and makes his own tortilla chips for nachos. He mixes his own salad dressings and sauces (think homemade BBQ sauce). Onion rings are cut, battered and fried to order. The pulled pork is slow cooked here at the mountain. Even the bagels are baked in the morning.
One item you’ll want to get your hands on this season: The Pretzel Burger. We’re on the band wagon. Prepped with heart and soul, the goodness is all found inside the bun. Layers of cheddar, caramelized onions and beef baked inside a pretzel shell.
So there you have it. We’re making it tasty up here at Mission.
