The Midway
We would like to let you know that one of the BEST things about our dining experience is that many of our items are homemade! Jim Miller - Chief Kitchen Officer shares his Homemade Granola Recipe (but you should also try his Clam Chowder, Chili, Salsa, Breakfast Burrito and dinner specials)
3 cups rolled oats, 1 cup slivered almonds, 1 cup cashews, 3/4 shredded sweet coconut, 1/4 cup plus tbsp dark brown sugar, 1/4 cup plus 2tbsp maple syrup, 1/4 cup vegetable oil, 3/4 tsp salt, 1 cup raisins, 1 cup cranberries. Preheat oven to 250 degrees. In a large bowl, combine the oats, nuts, coconut, and brown sugar. In a seperate bowl, combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour, stirring every 15 mintues to achieve an even color.
